Classes

Your class will take place in our brand new, purpose built facility in Dromana on the gorgeous Mornington Peninsula.

We’ll start the day talking about sourdough bread and how it differs from instant (yeast raised) bread, and discuss the importance of the flour to use and other ingredients then you’ll learn how to care for your starter, make a levain (the sourdough sponge), make and shape and then finally bake the most wonderful bread you’ve ever tasted.

Then we will move on to focaccia, croissants, flatbreads and other sourdough and talk about how to fit this ‘age-old’ baking method into a modern life.

A delicious lunch with a variety of breads will be served before you take home your baby starter… ready to start your own sourdough journey The cost is $290.00 – including your own sourdough starter to take home

• Instruction and understanding of basic cheese making including all the professional tips and tricks for getting it right the first time.
• We will make several cheeses from a variety of milks including a French style Brie, a range of goat cheeses and a delicious whole milk ricotta.
• Gourmet Lunch, cheese tasting, tea/coffee throughout the day
• We take a maximum of 12 students per class so that all students have the time to fully enjoy this ‘hands on ‘ experience.

If you love fish but need a little inspiration and confidence, this unique class is for you! Even if you know how to clean your fish, you’ll benefit from learning the expert tips and tricks from our Fishmonger and you’ll learn to maximise the results of your filleting and de-boning.

Our expert fish filleter will teach you how to clean and fillet a variety of local fish then our cooking teacher will introduce you to a range of delicious dishes and show you how to prepare them. You’ll enjoy a generous tasting of the dishes we’ve just prepared, matched with local wines.

Your new skills will include:

• Scaling, gutting, filleting fish
• Methods for extending the life of your cut fish
• How to prepare and cook mussels two ways
• Using the delicious bits you usually discard

You’ll enjoy tastings of several recipes which our cooking teacher will prepare to show you how to turn your ‘catch’ into dinner.

This hand-building class will teach you how to make fantastic clay stamps and rollers as well as stencils so that you can repeat your designs over and over again… and make new ones whenever you want.

On the first day, we’ll make a selection of stamps and rollers and then make a mug or plate… and on the second date, your stamps and rollers will be fired and ready for you to create your own masterpiece! Soon you’ll be making baskets, pedestal bowls and so much more.

You’ll be limited only by your imagination!!

• Class 1 –   Sunday 2nd August at 11am-3pm
• Class 2 – Sunday 9th August at 11am – 3pm.

The class includes both days of instruction, clay, tools, grazing lunch, tea and coffee and the firing of your stamps, texture rollers and other items

Cost $350.00

An Optional Glaze session will be offered the following month for those participants in this class.

The festive season is the best time to showcase our fabulous seafood and this class introduces you to a myriad of new ideas and flavours, perfect for your holiday table and picnics and gatherings throughout the summer. The best part of this class is that you will leave with the recipes and flavours of your perfect Xmas feast and know how to prepare it for your familys’ special day!

Our expert fish monger will teach you seafood prep skills as well as tips and tricks for preparing your summer shellfish, then our cooking teacher will share the cooking and tasting of our recipes with you. You will enjoy matched wines with generous tastings of all the recipes.

As a special pre-Xmas treat, we will then share our two favourite Xmas dessert recipes – never before shared!

The cost is $350.00 – including  presentation folder with recipes and selected wines. You’ll enjoy tastings of several recipes which our cooking teacher will prepare to show you how to turn your seafood into a fabulous celebration spread!
